“Oh, my! Is it cold outside!

Earlier this week, I managed to make my way back to the East Coast in anticipation of the holidays; so, I sit composing this post on my mother’s couch. Nestled in a little cove of blankets, sipping a hot cup of tea, with my tootsies thankfully snuggled inside of my favorite thick, fuzzy, purple socks.

And, I’ve got a friend here with me.

Keeping me company on this dark, chilly Northeastern Pennsylvania afternoon.

There was a time when I wouldn’t have considered 40 degrees uncomfortably cold. However, since I’ve made Houston my home for the last three years, both my perspective on and my tolerance of colder temperatures have altered dramatically. And honey, right now, it seems so very, very cold outside.

Given the fairly heavy content of my last post (salted peanut butter hot chocolate recipe aside, of course!), I decided to make this post much lighter. After all, it’s no good to be super-serious all the time–or even most of the time, if you ask me.

So, today, let’s talk lunch, shall we?

I made this cozy wild rice salad for lunch yesterday, and it was so delicious and easy that I made it again today, this time as a post-workout meal. After having spent the early part of my afternoon squatting, lunging, and pushing through an hour-long cardio session, this salad was fantastically rejuvenating! …”
